Executive Chef Paolo del Monte is joined by a surprise celebrated Perth chef, Paul 'Yoda' Iskov, to create a multi-course menu inspired by Albany’s rugged coastline, Denmark’s fertile hinterland and the seasonal produce of Western Australia’s south.

Each course is paired with wines from eight boutique Great Southern wineries, highlighting the region’s depth, nuance and character. 

A one-night-only celebration of Great Southern produce and boutique wines, brought to life through a collaborative multi-course dining experience in the heart of the city.
