•	Smoked Salmon Carpaccio – Sweet & sour vegetables, croutons, sour cream, fried capers

Main Course
•	Grilled Skirt Steak (6 oz) – Baby carrots, green asparagus, Dutch potatoes, red beet crème, thyme-port sauce
•	Wahoo Fillet – Black lemon risotto, broccoli, cherry tomatoes, champagne beurre blanc
•	Truffle Risotto – Mixed mushrooms, poached egg, green asparagus, scallions

Dessert
•	Vanilla Mousse – Caramelized banana, chocolate cake, caramelized pecan nuts, Bastogne cookies

1.  Trout Mousse – Blini, herring caviar, chives & Lobster Bitterbal – Saffron mayonnaise

2.  Shrimp and Scallops – Puffed red pepper, Lime, Red onion, Crispy quinoa, Cilantro
