About this Event

Our popular online event continues during winter 2025! The Capitol Hill Counseling and Resource Center is excited to continue the very popular "Food as Medicine" series, an interactive virtual cook-a-long class that connects health to food, led by acclaimed Nutritionist and Holistic Health Coach, Anelise Antunes.

This is a COOK-A-LONG class so a shopping list will be emailed to all participants before each class so participants can cook with Anelise.

MONDAY, FEBRUARY 17 @ 6 PM EST: WINTER-BAKED EGGPLANT SALAD

In this month's Food as Medicine, we will focus on cardiovascular health cooking with a not-so-popular vegetable, the eggplant. Eggplants have surprising health benefits: 1) It improves left ventricular function and 2) Reduces myocardial infarct size and cardiomyocyte apoptosis. It is loaded with nasuinin and various phytonutrients. Eggplants are known for their purple teardrop shape. But the family is large and eclectic, with green, white, pink, orange, and stripped-skin eggplants and melon shapes, and long and slim bodies. Join Functional Nutritionist Anelise in this exciting Food as Medicine cook along, cooking a nutritious and delicious Winter-baked Eggplant Salad.

This is a cook-a-long class. Register by Thursday, February 14th to receive a shopping list and general instructions. All recipes are plant-based and non-alcoholic.

MONDAY, MARCH 17 @ 6 PM EST: RED-ORANGE ROOT SLAW

This month during Food as Medicine, let’s soothe the stomach with a delicious Red-Orange Root Slaw. Some plant foods help support a healthy and happy gut. We are talking about foods rich in fiber with antioxidants and anti-inflammatory properties. In this session, we will be talking about the importance of implementing fermented foods and bitters in your diet for gut health.

This is a cook-a-long class. Register by March 14th to receive a shopping list and general instructions. All Recipes are plant-based and non-alcoholic.
