Come join Erin and Jim for an evening of simple additions to your diet that are delicious and will substantially increase your daily fiber intake.
Co-op Staff member Erin has been mostly vegetarian for almost 40 years. She has worked in the Co-op's produce department for 20 years and learned to cook largely from trying to incorporate various types of produce into the meals she makes. Erin loves to experiment with with food and especially enjoys finding recipes that can be used in multiple ways throughout the week for easy lunches and dinners.
Co-op Board member Jim has been a vegetarian for 40 years and has been involved with food co-op's for the majority of his adult life. With an early interest in cooking, Jim has made a point of learning and experimenting with a wide variety of styles and techniques of vegetarian and vegan cooking. Jim has also lived abroad in several different countries and had the opportunity to experience a number of cuisines first hand. He is also always interested in finding efficiencies in cooking, to make recipes more accessible to busy people.
