In this technique-focused class, we’ll mix a full batch of royal icing together and learn how to create the perfect piping, flood, and stiff consistencies. This is an excellent class for beginners and for anyone looking to improve their icing skills and gain confidence.

Who is this class for?
This workshop is perfect for anyone who has decorated at least one cookie set before and wants to learn how to confidently mix their own royal icing at home.

Recommended age: 16+

All tools, supplies, and cookies are provided for use during class.

In this workshop you will:

• Make a batch of royal icing together in class, step-by-step
• Mix 3 colors and thin icing to the perfect consistency
• Decorate 3 cookies using the icing you mixed in class
• Learn two methods for adding gel color
• Work with three consistencies: piping, flood, and stiff
• Feel and compare icing textures so you know exactly what “right” feels like
• Learn how to fix icing that is too thick or too thin
• Make your own royal icing transfer and use a dehydrator to dry it
• Use stiff icing to create a dimensional ruffle
• Mold icing to create texture and dimension
• Get real-time feedback and personalized help in a small, hands-on class
• Take home extra icing so you can practice at home


Optional Add-On: Take-Home Practice Kit
You may add a 6-cookie practice kit to your registration.
Each kit includes:
• 6 blank cookies from the full set
• Printed decorating instructions
• Extra empty piping bags (in case you need to re-bag your icing)

Please note: The kit does not include icing. You will use the extra icing you mix during class to complete the cookie designs at home.

Timing Note
This workshop is scheduled for 3 hours, but is expected to run 2.5–3 hours. I’ve booked the full 3 hours to ensure we have plenty of time, but we may not need the entire block.
