Verterra Rose of Pinot Noir
Bacon, blue cheese, mushroom duxelle puff pastry pinwheel with chive pesto, citrus cured scallop in phyllo with strawberry pineapple salsa.
Course 1
Verterra Unoaked Chardonnay
Pineapple & apple glazed halibut with arugula salad, shaved onion, feta, pineapple glass, tangerine vinaigrette.
Course 2
Verterra Chaos White & Verterra Pinot Grigio
Mint infused smoked melon prosciutto pinwheel with chaos pecan syrup & pecan tuile. Fresh mozzarella pinwheel with tomato gel, basil crystals, lava salt, balsamic & focaccia crumble.
Course 3
Verterra Chaos Red
Cold smoked rack of lamb, cherry jam chutney, cherry rosemary wine gelee, blue cheese soufflé, broccoli pesto tagliatelle, smoked pecorino.
Course 4
Verterra Late Harvest Riesling
Ancho roasted, wine infused pineapple, Mexican hot chocolate custard, marshmallow, waffle cone crumble, served with flamed chocolate sauce.
