Step into the land of a thousand lakes without ever leaving the Catskills. On Friday, July 25, and Saturday, July 26, from 11AM to 8PM, Catskill Brewery and Catskill Food Truck present Finland Weekend, a two-day celebration of Finnish flavors, traditions, and community featuring Chef Edurne Johanna Kristiina.

Born and raised in the Karelia region of Finland, Chef Edurne’s passion for cooking began as a way to connect with others while living abroad. Her food is rooted in traditional Finnish cuisine, simple, seasonal, and deeply connected to the land. Drawing inspiration from her homeland's foraging culture crafting dishes that offer a window into the soul of Finnish culture.

“The food I make is working people's food,” says Kristiina “It’s practical and proud. So much of it came from what was available during wartime; hunted, foraged, preserved. I want people to taste that history.”

A highlight of the event will be Karelian pies, a specialty from Edurne’s home region, which she calls “a symbol of Karelian independence and identity.” Finnish comfort foods and reimagined classics will be served alongside Catskill Brewery’s expertly crafted beers.

“So much of Finnish life is about living off the land—berries, mushrooms, fish—and gathering around food and heat,” says Kristiina “That warmth is what I try to bring to every dish.”

Influenced by her experiences in Basque Country, Sweden, Morocco, and the U.S., Edurne’s cooking style is both authentic and globally aware. Her connection to the Finnish community in NYC ensures that the ingredients and the spirit of the event remain true to their roots.

Finland Weekend isn’t just about food, it's an invitation to experience soft power through culinary culture, to open minds and palates to something rare and rooted.

Karjalanpiirakat: Karelian hand-made pies baked with rye and rice pudding filling served with egg and butter spread
Käristys: Lappish-style thinly sliced venison sauteed in Ball Lightning Czech Pilsner on buttered mashed potatoes and cranberry side
Kraavilohileipäkakku: Savory house-cured salmon cake with local greens
Chef Edi's mixed berry pie with whipped cream
