The mercury has found its summer hangout spot somewhere in the 80s here in Southern Appalachia and the humidity has parked its butt right on top of us for the season. But the good news about all of this is that gardens are flourishing. And it's during these months of long light that my favorite meals are placed upon the supper table. And with an abundance of fresh veggies and fruits, we seem to find less room for meat as the table is loaded with things picked fresh that morning. Plates of fried okra, green beans, taters in all their forms, sweet corn, fried squash, a fresh pone of cornbread, and there must always be a side plate of sliced tomatoes, cucumbers, peppers, and a mason jar half filled with water holding the green onions.
This is summer fare. This is about the only reason I tolerate the heat and humidity of summer.
