Milk on the Farm 101 - A Culinary Adventure in all Things Cheesy

Cow & Goat milk is so versatile and saves our family farm so much money by using the milk to make cheeses, yogurt, dressings, dips & more (not to mention the many health benefits from the probiotics of utilizing raw dairy). Many people don't realize that with proper handling and freshness, goat milk can taste very similar to cow milk and be used for many of the same things.
In this fun class we will get hands on with all things milk and sample many varieties!
Discuss Starters, rennet & wild innoculations.
We will begin the class by starting a classic cheddar cheese. While we wait, we will do an easy acid cheese as well as sample 2 of my favorite varieties Basil Pesto & 3 Pepper. We will discuss different uses for this cheese, affordable presses and different options for serving and use. Think ricotta, and amazing holiday appetizers topped with honey, nuts, figs & berries!
A standard raw cream cheese instruction will be given with a Mesophilic starter, as well as finished & taste tested.
We will view, discuss and take note on the many stages of clabbered milk as cottage cheese, cream cheese & also sample marinated cheese balls! Lets learn to separate whey, why you should save it and what you should use it for!
We will finish a yogurt 2 ways! As a dessert/breakfast and also as a base for dressings and dips.. think ranch, blue cheese & beyond with a discussion of yogurt cheese known as Skyr or Labnah. If time prevails, we hope to squeeze in a simple rennet cheese, sour cream or Chevre' and be sure to discuss everything from stretching to aging to squeakies & curds!
We will end this fun 3 hours with a a discussion on home made butters as well as taking your cheese making to the next step and sampling a simple farm cheddar!
Every single recipe will be provided, bring a pen and paper...and be ready to get cheesy!
This class will also include discussions on getting started with dairy cows! We can discuss milking, stands, feed of goats, cow & sheep! Also, shopping for raw dairy & the differences in pasteurization techniques. Bring your questions & lets feast as we create nourishment at the lovely L'Amour Du Lait.
