1st Course: Toro Caviar Hand Roll
Sake Pairing: Tatenokawa 18 Junmai Daiginjo – 2 ozLayered and full-bodied with notes of pineapple, strawberry, and honeydew.
2nd Course: Sous Vide Lobster Roll
Melted chive butter atop tender lobster, served in a warm soft rollSake Pairing: Tatenokawa Soube Wase Junmai Daiginjo – 2 ozVelvety and complex, with notes of lemon raspberry cake. Topped with black truffle and uniSake Pairing: Akagisan Kurobi Junmai Daiginjo – 2 ozRefined using an ultra-rare centrifuge separation method. Delicate and elegant, with creamy banana and cantaloupe notes and a long, invigorating finish.
5th Course: Soy Milk Panna Cotta
Served with blackberry jam and kinako powderSake Pairing: Nanbu Bijin Plum Sake – 2 ozNo sugar added—tart, vibrant acidity with chestnut umami from its all-koji base. A rare, sugar-free plum sake and a perfect finale.
