A blue‑corn tostada layered with tender brisket, aged cheddar, jalapeño‑poblano crema, pickled red onion, and micro cilantro
Paired with sparkling wine
• Grilled Peach and Brie Salad
Caramelized peaches and warm brie on arugula with candied spiced walnuts, peach‑jalapeño jam, and molasses‑balsamic glaze
Paired with a Prickly Pear Margarita
• Smoked Duck Breast
Cherrywood smoked duck over jalapeño‑cheddar grits with toasted corn salad and a blue tostada
Paired with Shiner Bock Beer
• Texas Style Beef Ribs
Fall‑off‑the‑bone ribs with Caribbean sweet cornbread, honey‑butter glaze, braised collard greens, and sweet potato purée
Paired with a Garrison Honey Dew Old Fashioned
• Bourbon Brown Sugar and Peach Bread Pudding
