CROSSROADS II: The Unseen Architecture of Coffeecraft

You are invited to step behind the curtain and better understand the coffees you work with. Explore the decisions, constraints, and technologies that shape them long before they reach the roastery.
Drawing on material realities from Mió’s estate and its wider producer network, the event is an interactive session designed to put coffee production at scale (or Coffeecraft, as Mió calls it) on the main stage, highlighting the interrelations between infrastructure, timing, space, weather, logistics, and human factors. Such influences always condition quality, consistency, and flavour. The beauty is in how choices are made when conditions are uncertain, and, quite often, unavoidable. Well-supported trade-offs are indispensable.
Rather than focusing on abstract processing theory, CROSSROADS II is about materiality: how coffee moves through a working farm, wet mill, and dry mill, raised beds, and other structures that, perhaps, you never heard of before; those tools bridge the coffees you serve in cafés, sell online, and enjoy every week.
The session will include, first, a guided discussion with interactive, shared problem-solving. Then, a tasting of Mió coffee roasted by PLOT.
This event will especially benefit PLOT clients who use Mió coffees and want to deepen their understanding of where those coffees come from, meet face-to-face with a few of the people responsible for them, grasp how they come into fruition, and what it takes to make them reliable in an unpredictable world.
