As a child, he was the one tasked with preparing tsukemono (Japanese pickles) for family gatherings, learning shoulder‑to‑shoulder with elders recreating the flavours of home. In 2020, he launched his Instagram @kenjcooks, where he documents his explorations in fermentation and the connections between diasporic food traditions and his own story. His first book, Ferment, now brings these threads together — and forms the backbone of this masterclass.​Across the evening, guests will learn how to make a variety of pickles using different techniques and flavour profiles.
