Each dish highlights the freshest ingredients, prepared with precision and harmony. From the delicate flavor of pristine sashimi to the nuanced textures of hand-pressed nigiri and inventive house specialties, every bite is designed to be both an elegant and unforgettable experience for all five sense. Optional beverage pairings are thoughtfully curated to complement each course.
 
Formally trained in Tokyo, Chef Masa Hattori brings over three decades of culinary mastery to Japengo, where he has led the sushi program for the past five years. His experience includes tenures at esteemed establishments such as Sushi Ikekan, Okina Sushi, and Ariakeso, as well as leadership roles at top restaurants across Hawai‘i. Now, Chef Hattori unveils his much-anticipated omakase experience at Japengo — a dazzling new addition to Maui’s culinary scene, destined to become a must-book for discerning diners.
