What You’ll Create

Each student will work with a two-layer cake that is torted into four layers, then filled, stacked, and carved into a heart shape. From there, you’ll build your cake from the inside out—learning proper structure before finishing with elegant piping details.

What You’ll Learn

This class is packed with technique and designed to give you a strong foundation in cake decorating:

• How to torte cake layers evenly and build a stable cake



• How to fill, crumb coat, and apply a final smooth coat



• How to carve a heart-shaped cake using a template (no specialty pans needed!)



• How to work with Swiss meringue buttercream



• How to color buttercream properly and understand basic color theory



• How to create a monochromatic color palette, including soft shade variations

Piping & Design Focus (Lambeth Method)

Students will learn the fundamentals of vintage Lambeth-style piping—a timeless decorating method known for its layered, elegant designs.

This style involves building multiple layers of piping to create depth and texture, and while it’s beautiful, it can also be challenging—which is exactly why we break it down step-by-step.

You’ll learn:

• How to properly hold and control a pastry bag



• Pressure piping techniques and consistency control



• How to use piping tips at different angles to achieve various designs



• How to layer piping to create a cohesive final look

Piping techniques covered include:



• Shell borders



• Reverse shell borders



• Pearl/drop borders



• Swags



• Ruffles

Each student will choose and mix their own custom color, making their cake completely unique.

Class Details

• Students ages 12 and older



• Student Fee: $85



• All supplies are included



• Students may bring a drink and an apron if they choose

If you cannot attend, you may request a one-time transfer with at least 48 hours notice if space allows, but this is not guaranteed.
