Albondigas (Spanish meatballs) in a piperade sauce (a classic Basque and Gascon pepper and tomato sauce) and topped with a shaving of specialty Spanish cheese

paired with Dr. Loosen GG Dry Riesling



Course 3

Alessio’s Pimento cheese with cherry and olive tapenade on a Firehook Sea Salt cracker paired with Bindi Sergardi Chianti La Boncia



Course 4

Marieke Holy Trinity Gouda Melange (an aromatic cheese with green bell pepper, celery, and onion) & Prosciutto Grilled Cheese Sandwich

paired with Carlos Serres Rioja Reserva



Course 5

Baked Brie topped with blackberry, plum and cocoa jam

paired with Indaba Merlot

Goat cheese, honey and lemon cannoli
