We open with a stunning fig and grape salad — ripe figs, sweet grapes and fresh mozzarella brought together with a fragrant basil herb oil and a bright, citrusy grapefruit dressing that is as beautiful on the plate as it is on the palate. From there we get into the heart of the evening — a carefully rolled chicken roulade stuffed with a house-made tabbouleh, pan roasted until golden and finished in a silky, bright lemon butter pan sauce that ties everything together beautifully. Alongside it, we toast quinoa low and slow with fresh herbs until it is nutty, fragrant and the perfect companion to everything on the plate. Three dishes that are refined, fresh and deeply rooted in the flavors of the Mediterranean.
