Step into an evening crafted for the wild hearts and divine palates.

Steele‑N‑Jo’s Bone invites you to a five‑course culinary experience where rustic mountain charm meets refined, indulgent flavor — all brought to life through the culinary stylings of Chef Graig Gaudio.

Your night begins with The Bump: an Osetra caviar tasting served with smoked salmon, chives, crème fraîche, and warm blinis. From there, you’ll be guided through a comforting bowl of Pastina, the Italian classic known as “penicillin,” featuring ancini di pepe pasta in roasted vegetable broth with Reggiano Parmesan and lemon zest.

A crisp Mini Romaine & Pear Salad follows, dressed in Champagne‑Tarragon vinaigrette with roasted pecans and Point Reyes fennel blue cheese.

For your main course, choose from three exquisite entrées crafted by Chef Craig Gaudio

Chilean Sea Bass en Papillote with beurre blanc, black truffle pavé potatoes, and sautéed broccolini

Braised Short Rib Rigatoni in black garlic cream, finished with burrata

Braised Short Ribs over artisan polenta with garlic‑lemon asparagus

The evening concludes with a silky Panna Cotta topped with macerated berries and a honey drizzle.

Each couple receives a bottle of wine! Your choice of Petit Verdot, Viognier/Chardonnay, or Pinot Noir, Sauvignon Blanc, with additional bottles/glass available for purchase.
