Together we'll will go nose to tail, breaking down an entire whole hog by hand using old-school, seam butchery techniques. Learn the professional knife skills we can all use at home.

Participants take home a prime selection of all the fresh pork we'll be butchering together that evening. 

And dress the part for this class + guided behind-the-scenes tour of Smoking Goose's USDA-inspected smokehouse: we provide your butcher's uniform...including a Smoking Goose butcher's hat for you to take home along with your fresh pork!

Enjoy a private tasting, hearty charcuterie + cheese board, and paired drinks during class, too.
