Stan and Tom unite to present Hoptober Festival Eve Dinner in the Red Shed.

Tom Westcott is part owner of Tom McHugo's Hobart Hotel. He has been working in kitchens since 2007 and has an interest in all things fermented (especially beer) which began whilst working with the team at former Restaurant Garagistes under Luke Burgess. After working at various establishments throughout Hobart, he decided, with his partner Whitney, that opening a pub to feed the masses would be a good use of time. Tom’s cooking is mostly inspired by eating what is available right now, preserving the excess and making things that can be afforded by all.

Stan Robert cooked in the kitchens of the Adelaide restaurant scene, including the Uraidla Aristologist with Jennifer Hillier and Michael Symons, but then decided that he really needed a Ph.D. in genetics and spent 20 years as a scientist.
He subsequently regressed to food but not to restaurants. He built a house and Fat Carrot Farm with his wife, Briony, and grows vegetables sought after by Hobart’s best restaurants. He loves to cook for his family, friends and, rarely, for customers, using produce from his farm and his accumulated repertoire of farmhouse, street, poverty and hillbilly cooking.
He prefers beer with his meals.

In 2016, after Stan ate one of Tom’s meals, he sought him out as someone he could trust to cook his vegetables. He has supplied him with seasonal vegetables ever since. Over this time, having talked, eaten and cooked together, they have developed a culinary rapport that is based on shared tastes and mutually held values on the production and preparation of food.

Hobart Brewing Co have collaborated with The Winston Brewing Co., Shambles Brewery, Willie the Boatman, Shark Island Brewing Company, Fox Friday Craft Brewery, Miners Gold Brewery and Spotty Dog Brewers for Hoptober IPA Festival.
