We’re excited to welcome Tom Sivilli to this class — he crafts sparkling wine using the traditional Champagne method, right down to hand-disgorging each bottle. It’s an incredible process, and hearing him talk about his craft is a treat.
We’ll be pouring a sparkling lineup that celebrates both tradition and innovation with our own label of imports from Spain, Italy and France - The Bubbles Project:
Along the way, we’ll talk through how these popular sparkling styles are made and what sets each apart. Oregon is gaining a truly international reputation for exceptional sparkling wine, and you’ll get to taste some of the most beloved styles — all crafted with care, character, and a sense of place.
