At that time, the availability of great sake in Australia was extremely limited. Having extensively travelled throughout Japan for almost 20 years, Matt Young understood that the successful future of sake would rely on showing Australia the amazing potential of artisanal sake and providing access to these wonderful products. Having previously worked in the UK at South London’s esteemed cafe-come-wine bar, Milk, as Restaurant Manager, & Michelin starred Lyle’s in Shoreditch. He returned home to Sydney at the beginning of 2018 to run all things beverage at A1 Canteen, and later move over to 2-hatted sister restaurant, Automata, as Head Sommelier, where he ran an extensive sake programme alongside the wine list & beverage pairing. He then decided to jump off the restaurant floor in 2021, correlating his love of Japanese culture and travel, with his obsession and fascination with Nihonshu - welcome to the world of Black Market Sake.Bar Selecta Hawthorn.Bar Selecta is an intimate vinyl listening bar tucked behind Glenferrie Road in Hawthorn.
