Amuse: Andouille and pimento pepper croquette with pickled apple and apple gastrique

Vegetable: Hominy risotto with crispy hominy, chili oil, and bacon

Fish: Salmon Rillette with pickled vegetables, cumin coconut emulsion, banana chip, and lime

Chicken: Confit Chicken with creamy orzo, wild mushroom, chicken jus, and parsley

Beef: Picanha with cumin coconut jus, charred pimento peppers, and pickled apple

Dessert: Caramelized apple with apple cider caramel, brown butter mousse, and oat crumble
