Inspired by the lifestyle practices of the world’s Blue Zones, each gathering is a celebration of both wellness, indulgence and longevity.
High in the mountains of the Greek island of Icaria, food has long been shaped by isolation, seasonality, and time. Built on legumes, ancient grains, wild greens, olive oil, and patience, Icarian cuisine reflects a way of eating that has quietly sustained generations and earned the island recognition as one of the world’s Blue Zones.
This dinner interprets and refines this concept by beginning with comforting, plant-forward courses before introducing carefully chosen proteins as moments of quiet indulgence. Guests can expect a delicate grouper course paired with white beans and aromatics, followed by lobster served with a farro “risotto,” where richness is balanced through texture rather than heavy sauces. The meal settles into its most grounding expression with slow braised lamb alongside lentils and bitter greens, a dish that captures the heart of Icarian cooking.
