French Pastry Series: The Art of Choux

Choux paste is one of the great secrets of French pastry. Deceptively simple, endlessly versatile, and the foundation behind some of the most beloved pastries around the world.

This French staple is well loved for being the perfect vessel for both savory and sweet fillings, choux paste is the technique that unlocks an entire world of pastry. In this hands-on class, Chef Kaytie walks you through it from scratch, then puts it to work four different ways in one unforgettable afternoon.

You will make a savory paste together. Pipe and bake your own gougères, warm, cheesy, herb-flecked, and eaten straight from the oven, and then move into three distinct éclair flavors: classic vanilla bean with dark chocolate glaze, pistachio cream with salted caramel, and raspberry cream with lavender white chocolate. Each one more delicious than the last.

The class closes with a build your own profiteroles bar!
All of the creams, glazes, toppings and fillings from the day spread out on the table, and you build your own box to take home. Your flavors, your combinations, your creation.
