THE FINAL FLAME MENU
1st Course
Tuna Crudo, Tomato Water, Smoked Olive Oil, Calabrian Chili and Green Almond
Drink Pairing: Blush & Burn - Brut rosé with a touch of red pepper syrup – effervescent and crisp with a flicker of heat to brighten the crudo.
2nd Course
Grilled Juusto Cheese, Fennel, Chared Nectarine, Feuille de brik, Baby Gem Lettuce
Drink Pairing: Golden Flame - Bourbon, Licor de Elote, and peach – warm, toasty, and fruit-forward to complement grilled cheese and charred nectarine.
3rd Course
King Trumpet Mushroom, Falafel Crust, Tahini
Drink Pairing: Silken Ash - Gin, Fernet Branca, honey, and lemon – earthy and balanced, echoing the umami of mushroom and tahini with a botanical lift.
4th Course
Cornish Game Ham, Caramelized Onion and Wild Rice Pilaf
Drink Pairing: Whispering Flame - Vodka, blanc vermouth, absinthe, and orange bitters – aromatic and elegant, with herbal notes that enhance wild rice and game.
5th Course
Beef Kebab, Eggplant Yogurt, Fire Roasted Pepper Sauce, Blistered Shishito
Drink Pairing: Smoked Corn & Fire - Spicy tequila, Licor de Elote, lime, and chili-honey syrup – bold and fiery with smoky sweetness to match roasted peppers and charred beef.
6th Course
Baked Alaska, Charred corn ice cream, macaroon, blueberry sauce
Drink Pairing: Afterglow - Aged rum, cinnamon-chile liqueur, coconut cream, and blueberry – creamy, spiced, and smoldering to match the dessert’s drama.
ABOUT THE CHEF: Mary Kastman is a UW Madison and Madison College Culinary Arts Program graduate who began her career in Madison before moving to Boston in 2011, where she discovered her passion for Eastern Mediterranean cuisine at acclaimed restaurants Oleana and Sarma. She became Executive Chef at Driftless Cafe in Viroqua, Wisconsin in 2019 and earned a James Beard Semi-Finalist nomination for Best Chef, Midwest in 2022. Her restaurant Purslane, which started as a pop-up in 2024, opened as a brick-and-mortar location in Milwaukee’s lower east side in spring 2025, featuring Mediterranean and Middle Eastern flavors with ingredients from Wisconsin’s small farms.
