There is no knowledge requirement for attendance, and is open to all students, whether new to meat evaluation or seeking to enhance their current skills.Anticipated ScheduleWednesday, June 8th· 10 am – 1 pm: Introduction and Retail ID· 1 pm – 2 pm: Lunch Break/ Interactive event· 3 pm – 5:30 pm: Pork Judging/ Retail Classes· 5:30 pm: AdjournThursday, June 9th· 8 am - 12 pm: Beef Grading· 12 - 12:30 pm: Lunch Break· 12:30 - 2:30 pm: Mock Contest· 3:30: Awards· 4:00: AdjournDuring the learning portion, we will spend time covering the fundamentals of:· Retail ID· Pork carcass and cuts class evaluation· Retail cuts class evaluation· Beef grading· Beef carcass and cuts class evaluation· Questions/Reasons introduction· Ways to construct a notecardMock contest in the afternoon will consist of:· Beef Quality and Yield Grading· Retail and Carcass Classes (Beef & Pork)· Retail ID· Questions – On select classes· Awards Ceremony – Brief recognition of top individualsParticipants are expected to wear closed-toed shoes, long pants, and bring a jacket to take part in activities in the cooler. Students should also bring a clipboard, pens, pencils, a hard hat, and a frock.
