Rich, yet light in texture, homemade ricotta is a prime example of how three ingredients (milk, an acid, and salt) can come together to make a huge difference in a finished dish.In class, we’ll experiment with different acidifying agents to create ricotta in easy, cost-effective ways that you can easily replicate at home. Once we’ve made our homemade ricotta, we’ll use the finished product in an Italian-inspired menu of appetizers, entrée, and dessert that showcases the versatility of the beloved cheese, including the whey (a natural by-product of cheesemaking).At the end of class, you’ll get to sit down and enjoy the impressive ricotta-filled meal you’ve created.You will be working in a small group. For ages 13 and up. Attendees not yet 17 years old must be accompanied by an adult. Each attendee must purchase a ticket.  21 or older?
