Two way pheasant salad with brined breast, crispy thigh rillette, candied pecans, dried cranberries, Honeycrisp apples, shaved fennel and creamy citrus dressing

Wild boar rack with Potatoes Anna, asparagus, maitake mushrooms and smoked grain mustard demi glace

4th Course

Foie gras crème brulee finished with chocolate pistachio bark
