COURSE OVERVIEW

Designed for anyone working—or aspiring to work—in the food and catering sectors, this SCQF Level 5 course delivers essential knowledge in food safety. Delivered on our behalf by Susan Messem from the Highland Council, this qualification ensures you understand the practical principles of handling food safely while remaining compliant with Scottish food safety legislation.

Aged 16–24? You can attend this course completely free of charge, with all costs fully funded by the Highland Council.

 * Aged 25 and over: For those not eligible for the subsidy, places are available at £95 per person.


KEY LEARNING OUTCOMES

This course bridges legal requirements with real-world kitchen practices, covering:

 * Food Safety Principles: Personal hygiene, protective clothing, and preventing contamination.

 * Microbiology & Hazards: Identifying foodborne illnesses and cross-contamination vectors.

 * Temperature Control: Safe cooking, chilling, freezing, and reheating practices.

 * Workplace Cleanliness: Effective cleaning, sanitisation routines, and pest control.

 * HACCP & Legislation: An introduction to Hazard Analysis and Critical Control Point systems.

> Certification: Successful completion awards a nationally recognised SCQF Level 5 certificate, demonstrating competency to employers and Environmental Health Officers.

Susan Messem brings extensive regulatory expertise from the Highland Council. Her first-hand experience with local compliance ensures the training is highly practical, engaging, and directly applicable to passing inspections and keeping consumers safe.



ABOUT THE FUNDER

This class is self-funded, but we can subsidise the full cost of the class for 16- 24-year-olds under Foundation Scotland's Employability fund. Please select the correct ticket for your age group.
