Third Course: Smoked Salmon Ravioli 
Smoked Michigan king salmon, ramps, fromage, handmade pasta, with a mushroom-Bellaire Brown broth

Fourth Course: Soft Parade Lamb
Rack of lamb sous vide in Soft Parade, Southwest gold beans, fresh peas, spinach & morel mushroom
Beer Pairing: Local's Amber

Fifth Course: Rhubarb Tart
Rhubarb compote, rhubarb-cherry ganache, gin-marinated rhubarb, shortbread crust
