Through time and space, I’ve never encountered a food more highly debated than Gnocchi. From Italy to France, all through the Americas and beyond, nearly every Nouvelle Kitchen in this new age of foods, has a version of Gnocchi on their menus in one form or another. From the uppity high end five-star brigades to your cousin’s, girlfriend’s, Nona’s homemade; Everyone has an opinion and a recipe by which they swear. However, there is one common space where everyone’s hearts hold true; Just uttering the word “Gnocchi” makes everyone say “Ooh!” It’s hard to find a more beloved little nugget of joy. The simplicity of a Gnocchi dish lies in the unadorned, humbly produced dumpling! In the most basic of recipes, you will find Potato, Flour and Salt. The French have had a take for centuries based on a Choux Recipe (Butter, Water, Salt & Flour). So very “Parisian”! The Romans are accustomed to often eating Gnocchi on Thursdays. Elsewhere, many Italians swear it’s not Gnocchi if it has eggs… Each region in Italy is known for its unique style and production making it easy to see why such a little dumpling is so highly regarded. In this class, we will leave all the debating at the door whilst we focus on introducing you to the pasta that started our curious expeditions into the wonderful world of “Pasta’ology” (Don’t google that word… We made it up. But it also fits the script). From water activity and hydration to flours and flotation, We will be covering several scratch recipes, cooking methods and finally the basics of creating a composed dish that will help you win the hearts of your kids, your spouse, the in-laws, coworkers, your tinder prospects, and even “Helen” from down the street that always gives you the side-eye why you unveil your goulash at the neighborhood cookouts. Class Notes: Cost: $35 Date/Time: Saturday, February 21st from 4pm-6pm Duration: 2 hours Workshop: You will have an introduction and presentation into the wonderful world of Gnocchi. Followed directly by a demonstration on technique before spending the majority of time in a hands-on production, in which our Chefs will be guiding the class through the idiosyncrasies of crafting Gnocchi.
