Enjoy this week’s casserole offering:
Taco Pasta Salad

INGREDIENTS
12 oz. uncooked pasta noodles
1 lb. cooked ground beef
3 Tbsp taco seasoning
1 cup cherry tomatoes, halved
1 cup shredded cheddar cheese
½ cup diced onions
1 cup tortilla chips or hard taco shells, lightly crushed
Dressing:
1/2 cup french dressing
½ cup mayo
INSTRUCTIONS
Cook pasta in salted water according to the directions on the package.
Drain and rinse with cold water until completely cool. Let drain very well.
Brown hamburger, drain grease. Season with taco seasoning. Let cool.
In a medium mixing bowl, stir together french dressing and mayo.
Add well drained pasta to a large mixing bowl with the cooked taco meat, tomatoes, onions, and cheddar cheese.
Pour dressing over top and toss mixture to evenly coat. Sprinkle crushed chips on top. Serve or store in the refrigerator. Best enjoyed within a couple of days.
