They use ambient yeast, spontaneous fermentation and only small amount of sulphites in reds and no added sulphites in whites and orange.When we ran similar tasting in Spain early in 2024 we called it "Un Vino Natural que No Huele Mal" (“A Natural Wine that Doesn't Smell Bad") as indeed, his wines present clear aromas with no defects of any king that often sold to the consumer as so called "natural aromas".
