And that wasn't the only thing that made it unique! It's family owned, it's one of the few distilleries in Scotland with its own floor maltings, and it's a farm distillery growing some of its own barley.Kilchoman's single malt whisky was practically an instant hit. So much so that in just 20 years of being open, they've already expanded the distillery several times!What makes the whisky so good? The distillery focuses on long fermentation, balancing the peaty whisky with a rich fruitiness. There's also a lovely salty note to it, thanks to the distillery's location on Islay. Adding to all that is their use of unique, interesting, and/or high quality casks, creating an excellent whisky.Our event will focus on Kilchoman's unique casks and the Islay barley, with a tasting of six whiskies. We'll start with a welcome drink and have cheese and charcuterie to munch on. Here's what we'll taste:Cognac Cask Matured - exclusively aged in Cognac casks, with a nose of rich apples and pears with notes of honey, orange peel, baking spices, and smoky peat; and a palate of creamy and buttery lemon, apricot, nutmeg, cinnamon, toasty oak, and peat smoke.Fino Sherry Cask Matured - aged exclusively in Fino Sherry casks (the lightest, driest style of sherry) with a nose of subtle peat smoke with green orchard fruit, toffee, and wafts of maritime air; and a palate of crisp green apples, lemon peel, salted almonds, caramel, and peat smoke.Casado - aged 6 years in ex-bourbon, then finished in Portuguese red wine vats, with a nose of bonfire smoke with dried apricot, Dr. Pepper, coastal salinity with marzipan and toffee apples; and a palate of black pepper cracked over smoked fish, lemon peel, tannic wood, and stone fruits.Loch Gorm - exclusively aged in Oloroso, with a nose of carmelized custard tart, freshly roasted coffee, and candied ginger; and a palate of honey-roasted figs, cloves, and sticky toffee pudding with a smoky hint of barbecued bananas.PX Sherry Matured - exclusively aged in Pedro Ximenez sherry casks, with a nose of dried fruit, earthy smoke, orange peel, dark chocolate, and hazelnut; and a plate of salted caramel, marmalade, sultanas, cinnamon, and toffee.Warehouse Liquors Single Cask - picked by legendary owner of Warehouse Liquors, Gene, this single cask was aged exclusively in ex-bourbon.100% Islay - this yearly release is distilled from barley grown entirely at the distillery's Rockside Farm. Each edition changes the casks used for aging, how long it ages, and therefore the tasting notes. So you'll just have to taste this one to find out!
