beetroot caviar, parmesan chip, zucchini & sprouted seed cracker, cultured cashew butter

cultured cashew cheese, house pickle, roasted garlic, fresh bread

lake trout or grilled oyster mushroom (v) crudo, cucumber radish slaw, dill oil, fermented blueberry gastrique, nasturtium leaf

Course IV
heirloom tomato & wild blackcap tart

Course V
grilled Lamb loin or eggplant steak (v) with mint and fennel, roasted garlic white bean puree, charred zucchini ribbon, smoked black current jus

strawberry rhubarb panna cotta
