Roasted Delicata Squash with Burrata, Pomegranate & Crispy Sage�Sweet roasted squash layered with creamy burrata, jeweled pomegranate seeds, and fried sage leaves. Finished with a drizzle of aged balsamic.
Wine Pairing: Grenache Blanc or Dry Chenin Blanc�Enough body for the squash, enough acid to lift the cream.
🥗 Second Course
Warm Pear & Frisée Salad with Bacon Lardon & Sherry Vinaigrette�Tender frisée tossed with roasted pear, smoky bacon, and a sharp sherry dressing. Finished with shaved aged cheese.
Wine Pairing: Pinot Noir (Oregon)�Light tannin, red fruit, earthiness that mirrors the season.
🥩 Third Course
