The Moorish nomadic peoples played a profound role in shaping the cuisines of Spain, North Africa, and the wider Mediterranean. Their influence lives on through techniques, flavours, and ways of cooking that honour fire, earth, and time.
From clay-pot cooking and wood-fired ovens to the layered use of spices and fruits carried along ancient trade routes, Moorish food culture is rooted in generosity, movement, and shared feasting. It is a cuisine shaped by travel, exchange, and deep connection to land and season.
In this workshop, Chef Ronit invites you into this rich culinary lineage through a hands-on, immersive experience that explores flavour, technique, and the art of cooking slowly and intentionally. The focus is on understanding the spirit of the cuisine rather than following a fixed menu.
The class concludes with a communal feast at the banquet table — a moment to sit, share, and enjoy what has been created together.
On arrival, guests are welcomed with homemade nibbles, a seasonal drink, and an introduction to the cuisine and flow of the day. Each participant receives a folder of recipes to take home.
Take time to enjoy the stunning surroundings of our Myocum property, with rolling hills, lagoon views, and our organic syntropic vegetable gardens — an integral part of the Open Table experience.

Classes are held in Open Table’s fully equipped commercial kitchen in Myocum. We are able to accommodate up to 8-10 people, which makes this a fantastic opportunity for groups of friends or colleagues.
