Warmer days make us all want fresh vegetables, tons of greens and refreshing flavors, but nature—at least here in the Northeast—isn’t actually ready to give us spinach or asparagus just yet, and summer stalwarts like tomatoes and zucchini are months away. So how do we cook well in mud season? By being smart about it. Join Milk Street instructor Laura Jarvis for a class where you’ll learn how we solve the culinary problems of this time of year. We put ingredients that are reliable in spring, like potatoes, into unexpected places, using them for texture and pliability in our favorite flatbread of the year. We make sure there’s plenty of green on the table—even if we have to get creative about where that green comes from—in the form of our herb- and pistachio-spiked whipped feta dip. We take cues from the Greeks to prepare cabbage, perhaps the most versatile over-wintered veggie of them all, in a way that’s as impressive as a great steak. And we turn to canned and jarred ingredients, such as sun-dried tomatoes and pickled jalapeños, that give us access to the flavors we crave at any time of year. You’ll come away from this class with four fantastic mezze-style dishes in your repertoire and with many more tips and tricks for shoulder season cooking.At this hands-on class, you’ll work in pairs at fully equipped cooking stations with the guidance of your lead instructor. In addition to hands-on cooking, the class will include demonstrations, tasting and discussion. We conclude with a family-style meal with complimentary beverages—including our favorite wines, of course—and dessert. Come with take-home containers: there are usually leftovers! Attendees receive copies of all the recipes you make and a copy of the most recent issue of Milk Street Magazine. Plus, in-person class attendees will receive a 20% discount on their next purchase at the Milk Street Store.About Laura: Laura is one of the culinary instructors at Milk Street. She is the chef and owner of Rose and Fig Culinary, where she creates thoughtful, home-cooked meals for Boston-area families. After honing her skills at several of Boston’s respected restaurants and institutions, she found her true calling in personal cheffing. For the past eight years, she has brought restaurant-quality food into homes, focusing on seasonal ingredients, comfort, and connection around the table.Our hands-on cooking classes are capped at 14 attendees. Students work in pairs of two at fully equipped stations. Each attendee requires their own ticket.This class is vegetarian and can easily be adapted for gluten-free and nut-free diets.
