- **Event Name**: In-Person Class: Milk Street’s Cooking Theory with Josh Mamaclay
- **Event Start and End Date**: Sat, 17 May, 2025 at 05:00 pm – Sat, 17 May, 2025 at 07:30 pm
- **Event Description**: Join us in person at Milk Street to learn the cooking strategy that will transform the way you cook.About this EventNOTE: iphone and ipad users,to register for class. What’s on the Menu:Fried White Beans with Bacon, Garlic and SpinachQuick-Pickled Onions, Chilies and GrapesTray Bake Slashed Chicken Two WaysHerby Yogurt Dip and VinaigrettesDescription:“Cardboard and fun stuff”: this is the way the self-proclaimed nerds at Milk Street’s Education Department like to describe our favorite kind of meal. We mean no offense to the cardboard. Things like chicken, white beans and bread are essential building blocks of a complete diet—and their neutral flavors give us the opportunity to flex our culinary muscles. In this hands-on cooking class with Josh Mamaclay, you’ll be invited to nerd out with us. Through tastings and discussion, you’ll come to appreciate the words we use to describe texture, flavor and sensation, why we think contrast is critical and when you can feel free to make edits to recipes—including ours. We’ll bust out some charts and work as a group to critically analyze the recipes you make. In your hands-on cooking, which you’ll do in pairs at fully equipped stations, you’ll get to make a lot of your own choices to design a meal that incorporates these lessons and appeals to your personal palate. By the time you sit down to dinner, the “cardboard”—now turned into deeply browned roast chicken, pan-fried beans tangled with spinach, herb-spiked yogurt and more—won’t seem so boring after all.About Josh: Josh Mamaclay has been fascinated by flavor since he first dove into the back of the pantry at 10 years old. His passion for food brought him to Johnson & Wales University in Providence, Rhode Island, where he earned his bachelor's degree in culinary arts and food service management. Since then, Josh has worked in pizza joints, fine dining restaurants and a chocolate factory. He has developed recipes for meal kit delivery brands like Purple Carrot and TB12 and served as the Marketing and Engagement Manager at Curio Spice Co. When he’s not busy cooking, you can find him painstakingly styling and photographing food, singing with his husband while strumming his ukulele, or leading intrepid adventurers through a fantasy-filled game of Dungeons & Dragons. Our hands-on cooking classes are capped at 14 attendees. Students work in pairs of two at fully equipped stations. Each attendee requires their own ticket. This class is vegetarian and can easily be adapted for gluten-free and nut-free diets.
