In this three-hour course, each student will learn the techniques needed to prepare the truffles — flavored with orange zest, juice, and French Christmas 4 spice — and Mendiants made with Valrhona 70% Guanaja chocolate, toasted nuts, and candied orange peel. This includes tempering chocolate, shaping candies, and decorating.
