These bakers want to change that. Our bakers are coming from Europe, Latin America, the Caucasus Mountains and Maine to share gluten-safe heritage bread traditions of ancient and heritage grains, until recently on the verge of extinction. These rare ancient grains, such as einkorn, are safe for most people with gluten allergies and absolutely delicious. Two full days of workshops span sessions for home bakers to deepen their knowledge or start a micro-bakery to professional bakers seeking to improve methods of working with heritage grains. Family-centered ‘Baking with Kids’ opens the baking experience to young people. Instructors:Michael the BakerA third-generation baker from the UK, coming to us via the Caucasus Mountains in Georgia (the country), where he has been researching ancient wheats and regional bread traditions.Eli RogosaFood and farming anthropologist, restores ancient grain biodiversity, and author of  ‘Restoring Heritage Grains’. Nick Greco A grain visionary  artisan baker who has spent over forty years baking in New York State, he now oversees the entire bread program for Wegmans, from sourcing heritage wheat varieties and farmers, to managing product development, and training the company’s bakers. Eric Rusch &amp; Melissa JohnsonThe folks behind America’s renowned artisan bread-baking website: breadtopia.com, they have spent over fifteen years introducing home bakers to the wonderful world of sourdough, and recently published Sourdough Cookbook for Beginners.Ellie Markovitchstorycooking.com will share her passion for innovative, sustainable food practices, visual storytelling and community engagement.  Born in Brazil, Ellie spent childhood weekends at her grandparent’s farm. “There was a story behind everything we did with our food.“ from how it was grown, harvested, cooked and shared. Cat MorrowLegacyAcres.org, Slow Foods Educator, recipe developer, will share traditional, nourishing Maine cornmeal recipes from tamale pie to muffins drawn from her family farmstead in Kenduskeag, Maine.CR Lawn  Vastly experienced master seed-saver, Cr Lawn founded Fedcoseeds.com 45 years ago, and is committed to preserving seed biodiversity and food sovereignty.Dusty DowseWith over fifty years of baking experience, he manages the Common Ground Fair Bakery, runs Lammastide Bakery, Cambridge, Maine, and is the bread educator for Maine Grains and Kneading.com; a scientist, seed-saver, and farmer entrusted with ancient flint corn.The Heritage Bread Festival  brings together world experts and the local community to celebrate not just the wheat harvest and bread, but the renewed interest in heritage grains so it can once again become the life-nourishing staff of life of yore.
