In this course, we will dive into the making of tart dough, its application, and storage methods. Students will have hands-on experience with the process of shaping tart dough and learn essential techniques for making various fillings.
∝ The preparation of lemon filling and ganache will be key topics of focus in this class.
∝ We will also cover important knowledge on how to store and sell tarts, as well as how to handle leftover fillings.
∝ Additionally, we’ll share how to make Flan (using an exclusive "Border" method that allows the flan to be frozen and still retain its crispy crust and soft center after re-baking).
