Join us at YETI Flagship as we host Chef Hugh Mangum to celebrate the launch of his book release, Barbecue: Smoked & Grilled Recipes from Across the Globe (Phaidon 2025).
Hugh will be on-site sharing his stories, answering some questions, and – of course – signing some books. He will be joined on stage by Texas Monthly's senior writer and restaurant critic, Paula Forbes, to engage in a fun conversation. Stop by to learn a thing or two and say hello. Written by American chef, pitmaster, live fire expert, co-founder of Mighty Quinn’s, and self-professed barbecue obsessive Hugh Mangum, Barbecue: Smoked & Grilled Recipes From Across the Globe is a decadent volume that offers a comprehensive and delicious tour across barbecue traditions, food cultures, and cooking techniques over 80 countries around the globe. With more than 270 home-cooking recipes, Barbecue is an encyclopedic, refreshing, and mouth-watering glimpse into one of the world’s most beloved culinary practices.
Author Hugh Mangum has meticulously curated the book’s recipes, all of which astound with their breadth and fascinating histories. These dishes are love letters to the art of barbecue and evidence of the cultural significance throughout this culinary tradition.
The collection unfolds across five chapters, each dedicated to a specific food category. The book opens with “Skewers and Sausages,” delving into their status as a popular street food. Recipes range from succulent Singapore Shrimp Skewers and classic Turkish Chicken Kabobs, to colorful Mexican Chorizo and lightly smoked Austrian Sausages. The “Mains” chapter focuses on dishes that celebrate rich, nuanced flavors and a range of preparation methods. Whether it be Korean short ribs, Angolan Grilled Fish, or Grilled Yuca from Cuba, these recipes beautifully showcase the myriad ways meat, fish, and vegetables can transform over fire, heat, and smoke. This section also features sandwiches, tacos, and burgers, offering delectable options for any meal or occasion.
Paula Forbes joined Texas Monthly's staff as a senior writer and restaurant critic in 2025. She is the author of several cookbooks on Texan food. In addition to writing for Texas Monthly before joining its staff, she has contributed to GQ, Food & Wine, Bon Appétit, Lucky Peach, the Houston Chronicle, Austin Monthly, and others. Originally from Wisconsin, Paula has lived in Austin since 2006.
