About this Event

Learn from one of the top forager and fermentation expert in North America! Author of 4 bestselling books related to fermentation: The Wildcrafting Brewer, Wildcrafted Fermentation, The New Wildcrafted Cuisine and Wildcrafted Vinegars

Fermentation is one of the easiest way to preserve food but it's also super healthy for you. You don’t need anything special to do it – just plants and salt.

The amount of delicious condiments you can make using fermentation is actually mind boggling, from simple sauerkraut to kimchi, salad condiments and even hot sauces. In this workshop, you will not only learn the basic methods but, even if you're already experienced, I will show you how to bring your ferments to the next level by mixing spices, aromatic plants, seeds, even wild plants and give you tips for pairing your fermented creations with interesting food.

I will even show you how to create ferments that everyone (even those who usually don’t like sour flavors) will appreciate and how to make 100% sure you never get a bad fermentation. If you are into health and flavors or want to learn how to preserve food from a gourmet perspective, this workshop is for you!

Before the workshop, just for fun, we'll do a plant walk and you'll learn about local wild edibles plants as well - it's a very slow walk with lots of stops.

This is a very fun hands-on workshop – Here is what you need to bring with you:

2-3 pint (500 ml) jars
1-2 regular green cabbages
I’ll provide the rest and you’ll get to take your tasty creation home.

Of course, we'll have some wild ferments tasting and drinks.

  Biography   Pascal Baudar is a writer, naturalist and a self-styled “culinary alchemist” based in Los Angeles.  His passion is to study wild edibles and research new culinary uses through ancient and traditional methods of food preservation as well as contemporary cooking techniques.  He also did the Master Food Preserving / Food Safety Advisor program at the University of California in 2011.   From 2011 to 2014, his truly unique preserves, drinks and various wildcrafted condiments made their way into the kitchens of such star chefs as Ludo Lefebvre, Josiah Citrin, Ari Taymor, Michael Voltaggio, Chris Jacobson, Matthew Biancaniello (Eat Your Drinks) and Niki Nakayama (N/Naka restaurant)   He has served as a wild food consultant for several TV shows including MasterChef and Top Chef Duels. He has been featured in numerous TV shows and publications, including Time magazine, the Los Angeles Times, L.A. Weekly, and the New York Times.   In 2014, he was named one of the 25 most influential tastemakers in L.A. by Los Angeles magazine and in 2017 as offering one of the most innovative culinary classes.   He is the author of 3 books - The New Wildcrafted Cuisine, The Wildcrafting Brewer and Wildcrafted Fermentation (available at the end of 2019). Both published books became amazon bestsellers in several categories.    His next project is related to using wildcrafting and art as tools to explore environmental issues by focusing on invasive and noxious plants with the concept of making food part of the solutions being offered - Not just herbicides or throwing away the resources (food waste),    Pascal also offers classes and workshops about wild edibles and their culinary/medicinal uses.
