Curious about Alaska’s spring birch harvest and how to tap your own trees? Join Ted Hammers of Hammers Family Birch and Kahiltna Birchworks for an introduction to the world of birch tree tapping.
This class will cover how to identify suitable birch trees, how to safely and sustainably tap a tree, and best practices for protecting long-term tree health. Ted will walk through the basics of sap collection, storage, and the many ways birch sap can be transformed into unique Alaskan products.
You’ll learn how raw sap becomes fermented beverages, rich birch syrup, and confections, along with real-world insights from commercial harvest operations in Talkeetna. The class will wrap up with a guided tasting of raw birch sap, fermented birch sap, birch syrup, and Alaska Gold Birch Caramels so attendees can experience the full range of what’s possible from Alaska’s boreal birch forests.
Perfect for gardeners, homesteaders, and anyone interested in tapping their own birch trees.
This class will be held in our classroom, located at 1301 E first Ave. It is right down the street from the retail store. Look for our classes banner along the street, park in the parking lot and the door will be to your left at the top of the stairs.
