In collaboration with the Fogolar Furlan Adelaide and supported by the City of Unley, join us as we learn how to make Frico Friulano! We’ll be learning how to make 'Frico' - traditional Friulian potato pancakes! The event will also feature a performance by the Fogolar Furlan Dance Group who will perform and teach the audience traditional Friulian dances 🇮🇹💃🇮🇹
This MOSAIC Cooking Class is proudly part of the Adelaide Italian Festival.

Massimiliano and Rita are two migrants from Friuli Venezia Giulia Region, that have been promoting the regional culture and traditions at the Fogolar Furlan Club since many years, with great passion and dedication around preparing regional dishes and authentic recipes to pass on to old and new generations.

THE DISHES:
Frico is a traditional dish from the Friuli Venezia Giulia region in northeastern Italy, particularly cherished in the mountainous areas of Carnia and around Udine. Its origins date back to the Middle Ages, when it was created as a humble, rustic way to use up cheese rinds and scraps - especially Montasio, a local cow’s milk cheese.
Over time, frico evolved into both a hearty meal and a crisp snack, depending on its preparation. The soft version, made with cheese, potatoes, and onions, became a comforting staple, while the crispy variety served as a simple yet flavourful treat. Deeply rooted in Friulian identity, frico is a symbol of frugality, hospitality, and the region’s strong agricultural and dairy traditions, often served during village festivals and family gatherings.
